In a bowl stir together diced apples, sugar, corn starch, cinnamon and nutmeg to coat evenly. Cut cinnamon rolls in 1/4 inch slices and them roll it out on a floured surface until thin.
Cook for a few minutes, stirring every minute or so, until the apples become soft. Add Maple syrup, cinnamon, salt and vanilla. Stir well. Cook another couple minutes if needed until apples are soft.
