Cook for a few minutes, stirring every minute or so, until the apples become soft. Add Maple syrup, cinnamon, salt and vanilla. Stir well. Cook another couple minutes if needed until apples are soft.
Apple pie filling is just a pile of fruit without a healthy dose of cinnamon. It makes the time of making homemade pie worth the effort, as the sweet apples absorb all of that warm spiciness.
