Cooked beef should be stored in the refrigerator once cooled, within two hours of cooking. It will cool more quickly if big pieces are cut into smaller ones, or if it is spread out on a baking sheet.
Technique tip: Roast vegetables on individual sheet pans as they will finish cooking at different times due to their density. Check vegetables after 10 minutes and see if pan needs to be rotated.
